This is one of my all time favorite cookie. The flavor combination of chocolate and caramel is tough to beat.

Ingredients
  1. 1 c all-purpose flour
  2. 1/3 c unsweetened cocoa powder
  3. 1/4 t salt
  4. 1 egg
  5. 1/2 c butter
  6. 2/3 c sugar
  7. 2 T milk
  8. 1 t vanilla
  9. 16 vanilla caramels (unwrapped)
  10. 3 T whipping cream
  11. 1 1/4 c pecans (finely chopped)
  12. 1/2 c semi-sweet chocolate pieces
  13. 1 t shortening
For the dough
  1. In a small bowl, combine flour, cocoa, and salt.
  2. Separate the egg. Cover and chill the egg white.
  3. In a large mixing bowl, beat butter on medium until creamy.
  4. Add sugar and beat until combined.
  5. Beat in egg yolk, milk, and vanilla.
  6. Slowly add flour mixture.
  7. Cover and chill the dough for about 2 hours until it is easy to handle.
  8. Preheat oven to 350.
  9. Lightly grease a cookie sheet.
For the caramel sauce
  1. Put the caramels and whipping cream in a small saucepan.
  2. Cook over medium-low heat until melted and smooth. Set aside.
Build the cookies
  1. Lightly beat the egg white.
  2. Place pecans in a shallow dish.
  3. Shape dough into 1-inch balls. (I use a scoop so all of the cookies are the same size)
  4. Roll balls in the egg white, then coat in pecans.
  5. Place about one-inch apart on the cookie sheet.
  6. Press thumb in center. (I use the end of a small round container instead)
  7. Bake for 10 minutes or until edges are firm.
Finishing touches
  1. Immediately spoon the melted caramel into the indentation.
  2. Transfer cookies to a wire rack and let cool.
  3. Place chocolate pieces and shortening in a small saucepan.
  4. Cook over low heat, stirring until chocolate melts.
  5. Cool slightly. Drizzle chocolate over cookies.
  6. Let stand until set.
Notes
  1. Layer cookies between sheets of waxed paper in an airtight container.
  2. They will keep in the refrigerator 3 days or in the freezer for up to 3 months.
