Chocolate Covered Almond Cookies
These would make a great gift. Decorate and put them in a box appropriate for the occasional.

For cookies
  1. 1/2 c unsalted butter
  2. 1/3 c powdered sugar
  3. 1 T cocoa powder
  4. 1/4 c almonds (ground)
  5. 1 1/2 c cake flour
For Chocolate Coating
  1. 1 c dark chocolate chips
  2. 4 T unsalted butter
For Decorating
  1. Your choice of nuts, sprinkles, nonpareils, jimmies, coconut.
For Cookies
  1. Preheat oven to 350.
  2. In a small bowl, mix the cake flour and almonds. Set aside.
  3. In a large bowl, beat the butter until creamy.
  4. Bead in powdered sugar.
  5. Beat in cocoa powder.
  6. Add flour/almond mixture and beat until it forms a ball.
  7. Form dough into 1-inch balls and place of a baking sheet.
  8. Freeze for 6 minutes.
  9. Bake for 20 to 25 minutes.
  10. Cool on a wire rack.
For Glaze
  1. Lay out a sheet of parchment paper.
  2. Prepare any decorations and have them nearby.
  3. Pull chocolate chips and butter in the top of a double boiler or a bowl over hot water.
  4. Stir constantly until melted.
  5. Dip each cookie into the melted chocolate and place on the parchment paper.
  6. Sprinkle with decorations before the chocolate hardens.
Notes
  1. Note: You can also decorate with icing, but wait until the chocolate is cooled.
