Ingredients
  1. 2 c cake flour
  2. 1/2 t baking powder
  3. 1/4 t salt
  4. 2/3 c powdered sugar
  5. 1/4 c granulated sugar
  6. 2 1/2 sticks unsalted butter (cut into pieces)
  7. 1 t vanilla
  8. 1/2 t strawberry or almond extract
  9. 1/2 t red food coloring
  10. 2 T cake flour
  11. 1 1/2 c nonpareils
Instructions
  1. In a food processor, mix flour, baking powder, salt, and sugars.
  2. Add butter, pulsing until batter looks like cornmeal.
  3. Add vanilla extracts process until it forms a ball.
  4. Divide the ball in half. Put one ball back into the processor.
  5. Add strawberry or almond extract, food coloring, and the 2 tablespoons of flour.
  6. Process until blended.
  7. Roll out each ball into a rectangle between two sheets of waxed paper.
  8. The rectangles should be about 8 1/2" and 11" and 1/8" thick.
  9. Leave the dough between the waxed paper and slide on to a baking sheet.
  10. Refrigerate until firm (about 2 hours).
Next Steps
  1. Pour nonpareils into a shall rectangular pan and set aside.
  2. Peel off the top sheets of waxed paper.
  3. Brush the white dough with a small amount of water.
  4. Flip the red dough onto the white dough. Press with your fingertips to seal dough together.
  5. Remove the top sheet of waxed paper. Trim the edges even.
  6. Let sit until pliable, but still cold.
  7. Start gently curling the long side of the dough, rolling it into a log.
  8. Repair any tears by pinching them together.
  9. Lift the log onto the nonpareils and roll until completely coated.
  10. Wrap the log in plastic wrap and refrigerate until firm enough to slice (about 4 hours).
Slice and bake
  1. Preheat oven to 350.
  2. Line baking sheets with parchment paper.
  3. Cut log into 1/4" slices and place on baking sheet about 2 inches apart.
  4. Bake for 15 - 17 minutes until the edges are light gold and cookies are no longer shiny.
Make Ahead Tip
  1. You can do all the hard part ahead of time, then just slice and bake when you need the cookies.
  2. The log will store in the refrigerator for up to a week or in the freezer for up to two months. If you
  3. freeze, defrost in the refrigerator overnight before slicing.
